Macaroons

Ingredients
1 1/4 cups dessicated coconut
4 tbs ground almonds or hazelnuts
4 or 5 tbs zylitol*
5 or 6 tbs melted coconut oil**
optional vanilla

Mix all the ingredients together & shape into balls (you may need to place the mixture in the fridge for a short while first so that the coconut oil sets a little). Keep the balls in the fridge.

Tip: these are really nice with some orange or lime zest added

* Zylitol is a natural, low GI sweetener with only 60% of the calories of sugar. It is available from various local outlets including Victoria Health, GNC & Sainsbury’s.

** Coconut oil is available from health food shops such as Victoria Health & The Haelan Centre.
