Courgette may not be the most obvious ingredient for a hummus, but this recipe is surprisingly delicious.
2 cups chopped courgette
1/4 cup tahini (raw if possible, or else make your own by grinding sesame seeds to a paste)
2 garlic cloves
1/4 cup lemon juice
2 tbs hemp, flax or olive oil
1tsp cumin (or to taste)
1tsp sea salt (or to taste)

Mix all ingredients together in a food processor until smooth & creamy. Amounts are approximate depending on taste.
