Leek & Potato Soup

This recipe is provided by Crouch End health food store, Just Natural.

All weights are approximate.
400g peeled, diced potato
100g chopped onion
300g roughly chopped leek
2-3 large cloves of crushed or finely chopped garlic
40gm butter
1litre stock or bouillon
seasoning
chopped parsley

Cook the potato, onions, leeks and garlic in the butter over gentle heat for about ten minutes, turning them over occasionally, making sure they do not burn. This process should not be hurried.

Add the stock. Cover and simmer until the potato is tender.

Blend and reheat, add seasoning and serve.
