Salad Sushi

Everyone I introduce these salad rolls to falls in love with them and they make an interesting alternative to ordinary salad.  Try serving them with grilled fish.

Ingredients

  • nori sheets (available from Asian supermarkets or health food shops
  • various salad vegetables eg lettuce, tomato, cucumber, avocado
  • a spread such as guacamole, peanut butter or olive pate

To make: lay a nori sheet out flat on a cutting board.  Spread it with the guacamole, peanut butter or olive pate but leave bare a 2″ strip at each end.

Lay the salad veggies evenly over the spread, packing them quite tightly to a height of about 1.5″.

Moisten the strip of nori sheet that is furthest away from you, then starting at the other end, roll up the sushi.  The two ends should theoretically stick together although you may have to practise a couple of times.

One tip: don’t eat them if you’re trying to impress someone: they’re messy and leave green bits in your teeth.
