Quick & Easy Winter Soup

This soup takes five minutes to make, so it’s a great recipe for cold winter days when you’re chilled to the bone and need something quick to warm you up.
Roughly chop three or four different vegetables (lettuce, tomato and celery make a good combination but experiment with a variety of vegetables to find out what you like), place them in a blender, cover with water and blend. Add a splash of olive oil and some salt, soy sauce, tamari or liquid aminos. Add some lemon juice, herbs, spices or other ingredients according to taste. I often add some coconut oil and maca (a superfood which is great during the winter months as it can increase our stamina).
Pour the soup into a saucepan and heat to your desired temperature, then turn into a bowl and eat. I often add some soaked seaweed (wakame from Fuji Foods on Priory Road) and some tinned tuna or mackerel to make it more of a hearty stew.
